Shunbou’s Original “Shunbou Soba” Noodles

For a limited time, our Japanese restaurant Shunbou is offering specially prepared Tsuji soba noodles from Yamagata.

Shunbou soba (buckwheat) is cultivated in Tozawa village in Yamagata prefecture and the noodles are made using an original blend that was developed solely for Shunbou restaurant.
The soba is ground in a stone mill to make buckwheat flour, which is then carefully hand-made into noodles.

Tozawa village has a river running through it that brings fresh, clear water to the surrounding areas.
A swidden, or an area of land cleared for farming by burning away vegetation, has traditionally been used for agriculture in this region of Japan. Since weeds do not grow in these fields, it is not necessary to use chemicals and the fields are usually used for growing vegetables.
Shunbou soba is specially grown in swiddens to keep it completely pesticide and chemical-free.

In the Kanayama area, Yamagata Prefecture, soba is popularly eaten from a wooden board made of Kanayama cedar and this style of eating soba is called ita-soba.
The restaurant will use this authentic presentation of the dish instead of using zaru, or bamboo baskets, which is the more traditional way of serving soba.
