【9/19~10/31】Chinaroom Special Collaboration Menu by Guest Chef from Grand Hyatt Taipei

Grand Hyatt Tokyo in Roppongi is excited to launch a special limited-time menu at the authentic Chinese restaurant Chinaroom from September 19 until the end of October, prepared by a guest chef from Yun Jin at Grand Hyatt Taipei.

With over 30 years of Chinese culinary experience from across China, Guest Chef Ben Hsieh will be creating his authentic Chinese regional and Taiwanese specialties with the chefs at Chinaroom from September 19 to 24. Signature dishes that are popular among discerning diners in Taiwan include appetizers like roasted mullet roe (蘋果烏魚子) and crispy long tail anchovy (江南鳳尾魚), hearty soups like braised minced pork meat ball soup with napa cabbage (沙鍋白菜獅子頭) and individual servings of Shark-fin-Free Buddha jumps over the wall (雲錦鮑魚佛跳牆) featuring abalone, fish maw and sea cucumbers, some of the most sought-after collagen-rich delicacies which the Chinese people have been consuming for thousands of years for glowing, porcelain skin. Dessert offerings include Papaya milk pudding (木瓜牛奶) and Taro cake with red bean paste (芋頭涼糕).

Signature dishes of Yun Jin, including appetizers Seared Mullet Roe (蘋果烏魚子) and Crispy Anchovy (江南鳳尾魚), hearty soups Braised Minced Pork Meat Ball Soup with Napa Cabbage (沙鍋白菜獅子頭) and individual serving of Shark-Fin-Free Buddha Jumps Over The Wall (雲錦鮑魚佛跳牆) with delicacies such as abalone, fish maw and sea cucumbers. 【Extravagant Bubble Tea Dessert Drink】JPY 2,000

Beautifully presented in multiple dynamic layers, the dessert drink is filled with four types of tapioca balls in different sizes and colors, fresh mango and strawberries and house-made fresh milk ice-cream, topped with bird’s nest, an expensive delicacy that Chinese has been using in cooking for over 400 years for its beauty benefits. It comes with a pot of chilled 13-year aged Pu-erh tea for diners to complete this dynamic drink that one could only find in a luxury hotel.

Born and raised in Taiwan, Chef Hsieh has more than 30 years of Chinese culinary experience and knowledge that he applies to his menus at Yun Jin of Grand Hyatt Taipei. Having worked with many distinguished chefs as he traveled across China to cultivate and establish his unique skill and techniques in the Chinese art of provincial culinary traditions, Chef Hsieh is famous for integrating new ingredients into traditional dishes to best combine health and wellness with the culinary desires of discerning diners.
