Chef Jimmy Wei has led the kitchen operations at Dining Room since the restaurant’s opening in 2016. Drawing on over 20 years of experience in innovative Chinese restaurants across Hangzhou, Chef Wei has developed Dining Room into a fixture of the city’s culinary scene, with eight consecutive appearances in China’s prestigious Black Pearl Restaurant Guide from 2019-2026. His dishes celebrate the flavors of the Hangzhou region through traditional recipes and modern, innovative touches, offering a memorable experience of China’s captivating regional cuisine.

High above the city on the 37th floor of Park Hyatt Hangzhou, Dining Room serves authentic local Zhejiang and Cantonese cuisines crafted by master chefs using seasonal ingredients. Filled with natural light and eye-catching city views, the pastel-hued restaurant is decorated with large glass lanterns and delicate silk panels hand-embroidered by Suzhou artisans.
