Chinese Mitten Crab Luxury Hotpot

Chinaroom has prepared a stately twist on the classic Chinese hotpot in this extravagant autumn dinner course. Our chefs have carefully selected ingredients including Matsuzaka pork, Tokachi beef and angel shrimp for guests to prepare in two soups, each simmered for more than eight hours to create a deep and complex flavor. The highlight of the course is the dramatic Chinese mitten crab, whose succulent meat is one of China’s most alluring autumn delicacies.

Assorted Appetizers

  • Including button shrimp in Shaoxing wine, steamed chicken and chilled jellyfish

  • White broth: made from duck, pork, Jinhua ham and a whole chicken simmered for 8 hours
  • Mala soup: made from duck, pork, Jinhua ham, a whole chicken, chicken feet, scallop shells and eisbein, simmered for 8 hours then combined with Chinese soup stock and 9 spices
