The chefs at Keyakizaka use -196°C liquid nitrogen and slowly combine it with a sweet mixture made of cream and fresh Ishigaki mangoes from Okinawa. Once the ice cream has solidified, it is presented in a glass with large chunks of fresh mango in the bottom.
